Granola Recipe

This recipe is a fan favorite in my household! It's an amazing mix of crunchy nuts and seeds and chewy dates. It only takes 10 minutes to prepare and a little over an hour to bake. Enjoy!


  • 3/4 cup raw almonds

  • 1/2 cup raw pumpkin seeds (pepitas)

  • 1/2 cup raw pecans

  • 1 cup raw walnuts

  • 2 Tablespoons chia seeds

  • 1/3 cup melted coconut oil

  • 1 teaspoon vanilla

  • 1 teaspoon cinnamon

  • 1/4 cup maple syruppinch of sea salt

  • 1/2 cup pitted and chopped Medjool dates


  1. Preheat oven to 250°F. Place almonds, pumpkin seeds, pecans and walnuts into a food processor and pulse a few times. The nuts and seeds should be chopped into smaller pieces, but it should not be processed too much because you still want some chunky pieces.

  2. Transfer the nut mixture into a large bowl, and add all remaining ingredients except the dates. Stir well.

  3. Spread an even layer of the mixture onto a large baking sheet lined with parchment paper (or 2 baking sheets if it all doesn't fit into one).

  4. Bake for 35 minutes. Remove from oven, add dates and stir the mix again. Bake for 25-30 minutes more or until granola is golden brown in color.

  5. Remove from oven, let it cool (it will get crunchier as it cools), and enjoy!
