Sweet and Spicy Cauliflower Poppers
Hey everyone! It’s been a few weeks since I posted something, but I’ll make it up to you with one of my favorite dinner recipes. These cauliflower poppers are so good. I devoured them in about five minutes! This recipe is adapted from Something Nutritious. It yields 4-6 servings and takes 40 minutes to cook.
1 medium head of cauliflower
2 eggs, whisked
2 cups whole wheat breadcrumbs seasoned with salt and pepper
1 tbsp olive oil or cooking spray
2 tbsp fruit sweetened apricot jam
1/4 cup low sodium soy sauce
1/4 cup water
1 tbsp sesame oil
1 tsp red pepper flakes
1 tbsp sesame seeds
1 tbsp minced garlic
1 tsp cornstarch
Pinch of salt
Preheat oven to 375 F.
Cut up the cauliflower into florets, dip each in the egg and then in breadcrumbs, and place them on a parchment lined tray. Drizzle with olive oil.
Bake on 375 for 35-40 minutes.
Whisk together the sauce ingredients in a small bowl. Add it to a large pan and bring to a boil. Reduce heat and stir in cauliflower. Cook for 2-3 minutes.
Top with sesame seeds enjoy!
