White Chocolate Cranberry Bars
I got this recipe from Liz Moody and it was amazing! I love craisins so I was very excited to try this recipe. This makes around 10 bars and takes 20 minutes to bake.
FOR THE BARS
1/2 cup creamy almond butter
1/4 cup maple syrup
1 tsp vanilla extract
1 cup almond flour
1/4 tsp sea salt
1/2 tsp baking soda
Zest of an orange
2/3 cup dried cranberries (aka craisins)
1/3 cup white chocolate chips
FOR THE FROSTING
8 oz cream cheese
2/3 cup powdered sugar
Preheat oven to 325 F.
Mix together the almond butter, maple syrup, egg, vanilla, almond flour, sea salt, baking soda, and orange zest in a large bowl.
Stir in 1/3 of the craisins and the white chocolate chips.
Put into an 8x8 pan and bake for 20 minutes.
After baked and cooled, beat the cream cheese and powdered sugar. Spread the frosting evenly on the bars. Sprinkle the rest of the craisins on top of the frosting.
*Note: I actually preferred the bars without the frosting, even though I still enjoyed them with it. My dad, on the other hand, thought the opposite. It’s up to you to decide which version you like better.
